Zucchini Season

It is zucchini season friends! At first, I was afraid, I was petrified, but now I am in LOVE! We enjoy zoodles at least once a week and yummy snacks like pickled zucchini spears and zucchini fries! I even have two zucchini casseroles in the freezer for the off-season!

Here are some of my favorite “zucchiniful” real food recipes…

On October 2, 2018, I shared a favorite zoodle recipe. Garlicky Shrimp Zucchini Pasta here. Like most things, I am always looking for ways to improve. Last week, I made a few alterations to this recipe, and they were a hit! I grilled some bone-in chicken breasts and pulled the meat. Then I sauteed zucchini zoodles in butter and garlic and strained off the excess water. I made the sauce as listed in the recipe, but I made it separately from the meat and sauce. In fact, I kept everything separate and served it up buffet style. The sauce was thick and flavorful and the zoodles weren’t too soft or too crunchy. I will make the recipe this way with either chicken or shrimp from here on out, and that’s a fact!

Last week I made pickled zucchini spears for the first time and honestly, I polished off an entire jar in two days just me myself and I! Zestful yumminess describes these little gems! One medium zucchini has only 6 grams of carbohydrates and 2 grams of fiber, so that is only 4 net carbs for you Keto peeps.

Zucchini fries are top-notch! I think they are better than French fries myself, but that is strictly my opinion. I would suggest trying these. Here is the recipe I use and the last time I made them I used coconut flour (affiliate link) instead of almond flour (affiliate link) and they turned out better. I think the almond flour tends to “burn” in the oil after the first batch or two where the coconut flour browns and crisps up nicely.

I’ve tried making zucchini chips in the oven and dehydrator several times and while they have a nice crisp, they just aren’t a favorite in our house. We will stick with the fries and spears for snacking. As far as freezer casseroles go, I love having a zucchini lasagna made ahead for those busy times when you just need a break from the kitchen.
