Soup-er Summer

Although it appears, we have officially transitioned from comfort food season to BBQ season I wanted to share a soup recipe I stumbled across recently. I love soup and can eat it year round even when it’s HOT.

When my husband fires up the smoker, he fills it, which is great, because we have good eats and then some to freeze. The last time he smoked chicken, I used leftovers to make chicken enchiladas and soup! Not just any chicken soup…

Smoked Chicken Tortilla Soup

This is so easy and delicious. The black beans and corn kick it off the low carb spectrum, but going on a carb kick occasionally is okay in my book. I love corn and beans on a southwest salad, and they are great in this soup.

I am so excited for my garden to begin producing. I can just smell Jalapeno Poppers on the smoker or grill. Veggie Kabobs and homemade salsa too! The veggies we don’t eat fresh will make great soups and casseroles this fall and winter. Knowing we will have fresh and healthy eats for days, weeks and months to come feeds my soul!
