Wellness Wednesday – PB&J – Low Carb

Yes, that’s right Wellness Wednesday is all about Peanut Butter and Jelly!!

We have made our own Peanut Butter for a long time, but Jelly set up a vacancy that couldn’t be filled. Until NOW! I am so excited to share this with you!

I am going to get right after it here and show you how we have PB&J and stay low carb.

Peanut Butter is SIMPLE. We buy Lightly Salted Dry Roasted Peanuts, toss them in a food processor and blend until it becomes peanut butter. This is the food processor I use. (affiliate link) Word of caution on buying peanuts, be sure the ingredient label says peanuts and salt, some manufacturers sneak in sugar or other nasty ingredients. We buy our nuts at Fleet Farm because they often have great sales. The food processor is a bit of a pain to clean, nothing terrible, but we make several jars at a time and store them in the refrigerator. That’s it! Peanut butter whole, real YUMMY!

This jelly recipe is super TASTY, so much better than anything store bought. I used organic frozen strawberries I had on hand instead of fresh and it turned out great. I just used a potato masher once the strawberries were thawed and simmering to make it into a jelly consistency. Once it cools you can store it in the refrigerator and use it on low carb tortillas (affiliate link) for a PB&J roll up. It is also tasty mixed into some plain greek yogurt or over low carb ice cream.
